Our tomatoes are harvested at the peak of ripeness and traditionally dried in the sun. This process creates a naturally intense tomato taste — the perfect blend of sweet and savory flavors. Following the drying process, these tomatoes are cut into julienne strips measuring 1/4 of an inch wide and approximately 1 to 2 inches long. This makes them the perfect addition to brined jars, cold salads and sausages.
